Q&A With Chef Jimmy

Q: Where did you get your inspiration to cook?

A: I always had an interest in cooking. It just came naturally. I never pursued it as a career until I was out of school several years and decided to just do what I love!

Q: Where did you first work as a cook?

My first job as a cook was at Burger King!

Q: What’s the favorite part of your job at Riverside Senior Living?

The favorite part of my job is my job. Putting a smile on a resident’s face is the best whether it’s a meal or something just for them to make them feel special.

Q: What does a typical day look like for you at Riverside?

I come in check on my staff and go over the menu for the day. I set up the coffee bar make sure that it is stocked up with fresh cookies, pastries, muffins or my newly famous smore treats. I walk the dining room and look at all the place settings. I check on lunch that’s being prepared. I make sure I taste everything before it goes to the residents. After lunch I will work on the next weeks menus, truck orders, and plan for special events. No two days are ever the same!

Q: What is your personal favorite thing to eat that you cook?

My favorite thing to eat that I cook is a steak because I’m very picky when it comes to my steak. I would rather cook my own.

Q: What special meals do you make for Riverside residents?

I like to add new items to the menu although we do have some Riverside staples that include the pot roast, meatloaf, fried chicken, and turkey wraps, which everyone loves!

Q: Where do you get your recipes?

My recipes and sources vary greatly. The ones close are from my grandmother. Some I have found online. If I do use one from online, or a book, I like to use them more for inspiration and add my own twist to make it my own.

Q: Do you watch any food shows on TV?

I enjoy most all food shows. Cut-Throat Kitchen, Diners, Dive-ins and Dives, Carnival Eats, Trisha’s Southern Kitchen, Paula Deen, Hells Kitchen, Restaurant Impossible are a few of my favorite shows.

Q: What do you do when you are not working?

When I’m not working? I’m probably hanging out with my kids or working on a project at home.
